Ingredients:
- 2 cups of long rice
- 250gm minced meat
- water
- 1/2 teaspoon saffron threads
- 2 tablespoons rose water
- 1/3 cup ghee or oil
- 1/4 cup boiled, peeled and halved almonds
- 1 medium onion, chopped
- 1 teaspoon Iraqi spice mix
- salt
- 1/4 cup raisins
- 3 cups of chicken soup
Iraqi spice mix
- 1/2 cup unground black pepper
- 1/4 cup coriander seeds
- 1/4 cup cinnamon sticks
- 1/4 cup nail cloves
- 1/3 cup cumin seeds
- 1 tablespoon whole cardamom pods
- 4 walnuts
- 1/2 cup ground paprika
Method of preparation:
Rinse the rice well with water. Soak the rice in cold water for 1/2 hour.
Put the saffron threads in a bowl, add rose water and set aside.
Bring a frying pan and heat half the amount of ghee or oil.
Fry the almonds until golden, then lift with a perforated spoon and transfer to a plate.
Then add the onions to the same pan and fry until soft.
Then increase the heat and add the minced meat in the same pan and continue frying, stirring constantly, until the meat becomes lumpy and all the juices have evaporated.
At that time, add the spices and half a teaspoon of salt in addition to the raisins.
Cook for an additional minute, then remove the pot from the heat, cover and set aside.
Then heat the rest of the ghee or oil in a deep saucepan, and add the saffron threads with rose water and chicken soup. And let it boil on the fire.
Then drain the rice and add to the boiling broth. And add salt to taste. Stir the mixture from time to time until the rice begins to boil.
Then reduce the fire and cover the pot tightly and leave on the fire for 30 minutes.
Add the meat mixture to the rice, cover the pot with a kitchen towel, and set aside for 10 minutes.
Place the rice in a serving dish and sprinkle the fried almonds on top.
