Ingredients

  • 75g butter, melted, plus extra for the pot.
  • 75g of strong white bread flour will be perfect and if you want brown flour, then you can use it also.
  • 150g instant polenta.
  • 1 tbsp baking powder.
  • 3 eggs
  • 350ml whole milk which is around one cup and half of the milk.
  • 100g mature cheddar
  • 2 small or 1 medium courgette (about 200g), trimmed and roughly grated.


Instructions

First step, start by heating the oven to reach a high temperature of  220C/200C and then, in a pan, get the butter around 900 grams and line the loaf tin with butter along with the baking area.

Second step, start with the mixing of the flour along with the polenta and the baking powder in a separate bowl and add around 1 tablespoon of salt to the mixture.
Third step, whisk the eggs and add the milk and the melted butter. You can add this mix to the previous bowl with the dry ingredients. Start mixing and stirring the cheese and the courgette until it becomes liquid and runny. Afterward, you will find that the polenta starts swelling and it will be absorbing all the liquid in the oven.
The fourth step, start pouring in the loaf tin that was previously been having butter and leave in the oven for around 15 minutes. You can then turn the oven down and lower temperature to around 200 C or 180 C and leave then for about 25 till 30 minutes. 



You will find that when a fork is added and inserted in the middle of the loaf that it will become out dry and clean. Afterward, you can cover the top with foil if it is showing that it is turning the color to brown more than expected.
In the fifth step, let the loaf to cool and leave it in the tin and then, get it out and slice it to small slices.
