 How to make corn and red bean salad

 A delicious salad that comes to you from Mexico, with available and nutritious ingredients, which is also suitable for dieting.


  Ingredients:

  •  ¼ cup (50 grams) boiled and red beans.
  •  ¼ cup (50 grams) kidney beans, boiled and drained.
  •  ½ medium red onion, cut into small pieces
  •  1 small red pepper cut into small pieces.
  •  1 small yellow pepper, cut into small pieces.
  •  ½ a cucumber cut into small pieces.
  •  ½ cup (100 grams) sweet yellow corn.
  •  ½ cup (100 grams) chopped parsley.
  •  1 medium jalapeno, chopped (optional)


 For the mixture:

  •  ¼ cup (62.5 ml) olive oil.
  •  ¼ cup (62.5 ml) vinegar.
  •  2 tablespoons (30 ml) lemon juice.
  •  2 tablespoons (20 grams) white sugar.
  •  1 clove minced garlic.
  •  2 teaspoons (10 grams) ground cumin.
  •  1 teaspoon (5 grams) ground coriander.
  •  ½ teaspoon (2.5 grams) black pepper
  •  ½ teaspoon (2.5 grams) hot sauce.
  •  ¾ teaspoon (3.75 grams) salt.


 How to prepare:

 In a deep bowl, mix all the vegetables well.

 Mix the ingredients for the mixture, then pour half the mixture over the vegetables, stir the salad and leave it in the refrigerator in a covered bowl, for at least an hour.

 Pour the rest of the mixture when serving the salad, and add more salt or seasoning to taste.


 How to make avocado salad with tortillas

 Another salad from Mexico, with a delicious mixture of avocado, chicken and tortilla bread.


  Ingredients:

  •  3 ready-made tortilla chips.
  •  2 tablespoons (30 ml) olive oil.
  •  ¼ teaspoon (1.25 grams) hot sauce.
  •  pinch of salt


  Mixture ingredients:

  •  1 tablespoon (15 ml) olive oil.
  •  1 clove minced garlic.
  •  2 teaspoons (10 ml) lemon juice.

 Method of preparation:

 Cut the tortillas into slices, and roast them in a medium-high oven with olive oil, a pinch of salt and hot pepper for seven minutes, or until golden.

 Mix the ingredients for the mixture in a bowl and set aside.

 Mix the salad ingredients and divide them into four bowls, then add part of the mixture, and serve the rest of the mixture with the salad in a separate bowl.


 How to make potato salad

 Potato salad is an easy and delicious recipe, and you do not need time or difficult ingredients to prepare it, and you can prepare it with your children.


  Ingredients:

  •  3 medium potatoes.
  •  1 tablespoon (10 grams) of salt.
  •  ½ cup (100 grams) green onions, sliced
  •  2 tablespoons (20 grams) chopped parsley.


  Mixture ingredients:

  •  5 tablespoons (75 ml) olive oil.
  •  2 tablespoons (30 ml) lemon juice.
  •  Finely minced garlic clove.
  •  1 tablespoon (15 ml) mustard.
  •  2 tablespoons (30 ml) mayonnaise.
  •  1 teaspoon (5 grams) sugar.
  •  ¾ teaspoon (3.75 grams) salt.
  •  ½ teaspoon (2.5 grams) black pepper


 How to prepare:

 Mix the ingredients for the mixture and set it aside.

 Cover the potatoes with water in a deep pot, add a tablespoon of salt, and boil them until a little before they are done.

 Peel the potatoes and cut them into medium cubes, then add half of the mixture and leave for at least 30 minutes.

 Add the parsley and onion to the remaining mixture, add it to the potatoes and then serve.


 How to make beet salad

 One of the salad recipes with high nutritional value and delicious taste, as it is easy to prepare.


 Ingredients:

  •  5 medium beets.
  •  3 tablespoons (45 ml) balsamic vinegar.
  •  2 tablespoons (30 ml) olive oil.
  •  1 tablespoon (10 ml) sugar.
  •  ¼ teaspoon (1.25 grams) cumin
  •  ¼ teaspoon (1.25 grams) salt.
  •  4 tablespoons (40 grams) chopped mint


 Method of preparation:

 Wash the beets well and cut the roots, leaving a small part of them, and dry them well.

 Put the beets in the oven tray, close it, and leave in the preheated oven at a medium temperature for 45 minutes, turning from time to time until cooked on all sides.

 Let the beets cool for a few minutes after ripening, then peel them (it is best to wear gloves so they don't leave a red color on your hands).

 Cut the beets into small cubes and put them in a deep bowl, and in another bowl, whisk the oil, vinegar, sugar, salt and cumin well.

 Add the mixture and three tablespoons of mint to the beets, and stir the ingredients well.

 Sprinkle the remaining tablespoon of mint on top of the salad and serve. You can prepare the salad in advance, but do not add mint to the mixture until before serving.
