1- TRES LECHES OVERNIGHT OATS

INGREDIENTS

·         1/2 cup old fashioned rolled oats

·         1/4 cup almond milk

·         2 tablespoons sweetened condensed milk

·         2 tablespoons evaporated milk

·         1/2 banana, sliced

·         1/8 teaspoon cinnamon

·         2 tablespoons chopped walnuts



INSTRUCTIONS

1.            In a small container of your choice (should hold at least 8 ounces of liquid), add all of the ingredients.

2.    Close container and shake until all the ingredients have thoroughly been mixed together.

3.    Refrigerate overnight and top with extra banana slices, cinnamon and chopped walnuts if desired. Enjoy!


Mexican fruit salad.

INGREDIENTS

  • 1 inch pineapple halved, hollowed and fruit cut into 1 chunks (use 1 cup of pineapple chunks for this recipe and reserve the rest for another use)
  • 1 cup of watermelon balls or 1 inch chunks
  • 1 cup of 1 inch mango chunks
  • 1 cup of 1 inch papaya chunks
  • Juice of 1 lime
  • Chili lime seasoning to taste
  • Optional garnishes: mint sprigs lime wedges.

INSTRUCTIONS

1- Place all of the fruit into a large bowl. Add lime juice and gently toss to coat.

2- Place the hollowed out pineapple on a large plate and fill with fruit. Scatter any remaining fruit around the pineapple shell.

3- Sprinkle with chili lime seasoning to taste and garnish with mint and lime wedges if desired.



3- CHURRO MUFFINS

Ingredients

Muffins:

  • 1/2 cup white sugar
  • 1/4 cup butter melted
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Churro Cinnamon Sugar Topping:

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Instructions

1.            Preheat oven to 375 degrees F. Coat a 24 mini-muffin pan with cooking spray.

  1. Mix 1/2 cup sugar and 1/4 cup butter in a large bowl. Stir in the milk and vanilla, then mix in the flour, baking powder, and salt until just combined. Fill the prepared mini muffin cups about half full.
  2. Bake in the preheated oven until the top of the muffins are lightly golden, 15 to 20 minutes.
  3. While muffins are baking, place 1/4 cup of melted butter in a small bowl. In a separate bowl, combine 1/2 cup of sugar and cinnamon.
  4. Turn the muffin tin pan over to release the muffins on a plate or cooling rack.
  5. Dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture. Let cool and serve.

 


4- Breakfast Churros With Cinnamon Sugar Recipe

Ingredients

  • 1 cup water
  • 2 tablespoons vegetable oil plus more for frying
  • 2 1/2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unbleached all-purpose flour
  • 1 large egg
  • 1 cup confectioners’ sugar
  • 1 teaspoon ground cinnamon

Instructions

Line a baking sheet with parchment paper. In a medium saucepan, combine the water, 2 tablespoons oil, granulated sugar, and salt. Bring to a boil and remove from the heat. Stir in the flour rapidly, until the mixture forms a ball. Transfer to a food processor, add the egg, and process until smooth.

Put enough oil in a deep fryer or a large saucepan to reach a depth of 1 inch. Heat until a piece of the dough dropped into the oil turns golden after 30 seconds (375° to 400ºF on a deep-fat thermometer).

Meanwhile, place the dough in a plastic piping bag or a ziplock bag with a corner snipped off and pipe 4-inch “sausages” of dough onto the baking sheet.

Gently transfer the dough to the oil in batches using a large spatula or slotted spoon. Fry until golden brown, about 2 minutes. Drain on paper towels and place on the baking sheet. Repeat until all the dough is used.

Mix together the powdered sugar and cinnamon in a small bowl. With a small sifter, sift the sugar mixture over the warm churros. Serve warm.
