I consider this cake as the best cake I have ever eaten. This is a heartwarming Japanese cake. It is very fluffy, wiggly, and light. It is a mouth-watering and amazing cake that will definitely fit your mornings and your everyday.

This is the recipe and you should pay attention to the steps very carefully in order that it is not cracked. Any error in the addition of the ingredients or in the steps will end up ruining the cake. Bake and enjoy:


Ingredients

These ingredients are set for 6 servings:

  •     7 tablespoons butter
  •    4 oz cream cheese(100 g)
  •     ½ cup milk(130 mL)
  •       8 eggs, yolk
  •       ¼ cup flour(60 g)
  •     ¼ cup cornstarch(60 g)
  •     13 large egg whites
  •      ⅔ cup granulated sugar(130 g)
  •     hot water, for baking
  •       powdered sugar, for serving
  •       1 pt Strawberries(340 g), for serving

Instructions

The first step is, Preheat the oven to 320°F (160°C).

In the second step, In a small pot over medium heat, and start to whisk together the butter, cream cheese, and milk until you find that they are well melted and very smooth. Afterward, Remove from the heat and let cool.

In the third step, In a large bowl, whisk the egg yolks until smooth, then slowly add and drizzle in the cream cheese mixture, stirring until you ensure that they are evenly combined.

The fourth step is, Sift in the flour and the cornstarch and do so by whisking to make sure there are no lumps.

The fifth step, In another large bowl, starts to beat the egg whites with a hand mixer until they are very soft peaks form. Afterward, gradually start to add the sugar while continuing to beat until stiff peaks form.


In the sixth step, Fold about ¼ of the egg whites and into the yolk mixture, in a very slow motion in order not to ruin the froth of the eggs that are formed, then repeat with the remaining egg whites until the batter until you find that they are well combined in the perfect form.

Seventh step, Grease the bottom of a 9 x 3-inch (23 x 7.5 cm) to be in a round cake pan, then line the bottom and sides with parchment paper as this step is very important to prevent that the cake would attach to the pan. If using a springform pan, make sure to wrap the bottom and sides completely in foil twice and this is important to prevent any leakage to happen.


In the eighth step, Pour the batter into the pan and start to shake in order to release any large air bubbles.

The ninth step, this is the step of the water bath and you would start by placing the pan into a larger baking dish lined with 2 paper towels at the bottom. The paper towels are a trick as it shall ensure that the heat is evenly distributed on the bottom of the pan and thus, there would be not an area that doesn’t have the heat more than other or vice versa. Then, fill the larger pan about 1-inch (2-cm) high with hot water.

In the tenth step, you will Bake for 25 minutes, then start to reduce the heat afterward to 285°F (140°C), and start to bake for another 55 minutes, until the cake has risen to be very high.

In the eleventh step, Remove from the oven, and carefully invert the cake onto your dominant hand and peel off the paper. However, Be extremely careful, as it shall be hot. You can also invert the cake onto a plate, but I don’t recommend this as it will lead to the deflation of the cake.


In the twelfth step, you can do this step or not as you will need to add sugar on the top to dust it. However, some people would love it without the addition of sugar. You can also add blueberries or mango slices, or strawberries. In all forms, you can have the best cake ever.
