Spicy chorizo enchiladas

In this recipe, you shall need the following ingredients:

-       1 tablespoon of olive oil.

-       1 onion that is already thinly chopped.

-       3 chopped garlic cloves.

-       1 medium-sized carrot that is already thinly chopped.

-       1and 1/2 red chilies which are the long ones and thinly chop them.

-       1 chorizo with the casing being removed and crumbled.

-       1 and 1/2 tablespoon of small paprika that is smoked which is pimento, with ground cumin, dried oregano.

-       Ground coriander seeds.

-       400 grams that are lentils, being rinsed and drained.

-       2 cans of 400 grams of chopped tomatoes.

-       350 grams of fresh ricotta.

-       2 tablespoons of parmesan that is finely chopped and more to serve later.

-       Parsley and red vein sorrel that are served.




The ingredients for the Chickpea Omelets:

-       6 eggs and beat them with the mixer lightly.

-       ½ cup of 75grams of chickpea flour.

-       1 and ½ tablespoons of olive oil.

Now, the instructions and Directions:

First, to prepare the omelets, you would whisk the eggs along with the chickpea flour in a bowl along with ½ cup of 125 ml of water and 1 tablespoon of salt until they become soft and smooth. Then, you can set them aside for 10 minutes to be thicker.

Then, second, line a baking tray along with a baking paper.

Third, heat around 1 tablespoon of oil in around 22 cm in a frying pan that is non –stick preferred and put it over medium heat. Then, add around 1/3 of a cup of 80 ml and batter. Swirl to coat the pan and create a very thin pancake. 



The cooking time is around 2-3 minutes on one of the sides and then start turning to the other side. Repeat and do the same with the rest of the oil. Batter to create around 6 pancakes. Keep them aside until they are required for the rest of the recipe.

Fourth, to prepare the filling, you will need to start heating the oil in a frying pan and a large one. Put it over medium heat. Then, add onions, garlic, and celery as well as the carrots that are already chopped. 


Start cooking and stir frequently for over 15 minutes. You can cook for or less as you need it to e softened and to have a light golden color. Start adding the chili as well as the chorizo.
