How to prepare

Place the quinoa in a large saucepan and cover with two cups of cold water, simmer over medium / high heat until boiling.

Reduce heat and simmer covered until the water has completely evaporated (this takes about 12-15 minutes).

In a large bowl, transfer the quinoa, add the red pepper and half the lemon juice and stir until the ingredients are combined, set aside for 5 minutes to cool.
