 INGREDIENTS

  • 3 Medium Navel Oranges
  • 1 cup Mixed Fruit – Your choice, I prefer berries

Yield: 3 Jack-o-Lanterns. Multiple as needed.

Directions

  1. Slice off the tops of the oranges.
  2. Using a spoon, scoop out the pulp of the oranges.
  3. Cut out faces on each orange to resemble a Jack O Lantern.
  4. Fill each orange with mixed fruit and serve.

  • 3 slices of banana
  • 6 pumpkin seeds

INGREDIENTS

DRY INGREDIENTS:

  • 1 c. + 2 Tbsp. 
  • 1 Tbsp. flaxseed meal
  • 2 tsp. granulated sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda

WET INGREDIENTS:

  • 1 c. Silk Organic soy milk(original and unsweetened)
  • 1 Tbsp. oil (for oil free, use unsweetened apple sauce)
  • 1 tsp. apple cider vinegar

 

INSTRUCTIONS

  1. Whisk together the dry ingredients in a large Pyrex measuring cup.
  2. Add all the wet ingredients and mix until completely smooth.
  3. Heat up a skillet on medium-high.
  4. Spoon a couple of tablespoons of the pancake batter into the skillet. Flip over once air bubbles from and the pancake is easy to pick up with a spatula and flip.
