This salad is kale and sweet Potato salad. Kale is one of the vegan ingredients that are considered as superfood. It is an anti-oxidant booster and it has a leading role in the prevention of different diseases.

Ingredients

for 4 servings

·         1 ½ cups sweet potato(300 g), diced

·         ½ teaspoon garlic powder

·         2 teaspoons paprika

·         salt, to taste

·         pepper, to taste

·         olive oil, to taste

·         ½ cup pumpkin seeds(65 g)

·         2 teaspoons chili powder

·         2 tablespoons maple syrup, divided

·         ½ cup tahini(110 g)

·         1 ½ tablespoons lemon juice

·         3 tablespoons water

·         1 bunch kale, stemmed and torn into large pieces

·         3 cups quinoa(510 g)

·         ½ cup red onion(75 g), diced

Directions and Instructions for a lovely morning salad:

First step, preheat the oven to a high degree of 375°F (190°C). then, start adding the sweet potato on a baking sheet. Add garlic powder, salt, paprika and other herbs and spices as you like. Add olive oil.

Second step, start tossing until the sweet potato is fully covered with spices and then, starts spreading in an even way. Then, Bake till 15 minutes until you can find it in tender form.

Third step, an bowl, you can add pumpkin seeds along with chili powder and a tablespoon of maple syrup. You can also add salt, and start mixing all until they are well ,mixed. Start spreading the pumpkin seeds on a baking sheet so they’re not touching each other.

Fourth step, Add to the oven with the sweet potato and leave to bake for 10 minutes, and don’t forget to stir halfway through, until toasted.

Fifth step, in a liquid measuring cup, mix the tahini, and remaining tablespoon of maple syrup, as well as add lemon juice, salt, and pepper. Mix well, and then add around 1 tablespoon of water at a time in order to reach the desired consistency.



Sixth step, in a large bowl, you can drizzle the kale with olive oil.  You can mix with your hands until you make sure that the kale is tender and that it has a less volume to be less about a third.

Seventh step, you can add quinoa, and the roasted sweet potatoes, along with the chopped red onion, and pumpkin seeds. Drizzle with tahini dressing and toss well.
