This is the recipe for the easiest lemon cake with lemon glaze on the top, very moist, fluffy, and with fresh lemon flavor that is amazing for hot summer days.

This recipe will make you hooked up for the second bite and it shall give you the powerful taste you are looking for besides your coffee, tea, and as a wonderful taste for beautiful mornings.

This recipe of the fresh lemon cake is better than Starbucks cake and it is much infused with the homemade lemon syrup for a boost lemon kick taste. You can add the lemon glaze on the top after it cools and enjoys.


Delicious Lemon Cake Recipe

This recipe can be done in less than 10 minutes and from scratch. You will love it and it will blow your mind. It is my favorite for an early morning breakfast treat as well as a late-night treat. Everyone will adore it and you can take it with you to work or anywhere.

The batter has freshly grated lemon juice and grated lemon zest and it is infused with lemon syrup that will give it a lemon kick. This lemon cake is fluffy moist and perfect for every day.

The cooking time is 45 minutes and thus, the total time is 1 hour.

Lemon Cake


INGREDIENTS

  •           1 ½ cup of flour.
  •          1  ½ tablespoons of baking powder.
  •           1 tablespoon of salt.
  •          ½ cup of unsalted butter.
  •          1 cup of sugar which is granulated.
  •           2 eggs.
  •          1 tablespoon of vanilla extract.
  •          2 tablespoons of lemon juice which is ½ lemon.
  •      ½ cup of buttermilk.

 

Lemon Syrup recipe

-1/4 Cup of lemon juice which is 1 lemon.

- 3 tablespoons of powdered sugar.

Lemon Icing recipe

-          1 cup of sugar. (powder form)

-          1.5 tablespoons of lemon juice.

-          1 tablespoon of milk.


INSTRUCTIONS

First, preheat oven to 350°F (177°C). And then , Grease a 9x5-inch (or 8x4-inch) of the loaf pan.

Second, in a medium bowl, you can start to mix the flour, along with baking powder, and lemon zest, and salt.

Third, in the bowl of a stand mixer fitted with the paddle attachment ,or using the automated one, start to mix and cream the butter along with sugar together at medium-high speed until you would be getting pale and fluffy texture and then, continue for about 4-6 minutes.

Lemon Icing recipe

Fourth, with the mixer running on low speed, start adding the eggs one at a time, and then, start beating the lemon juice along with the vanilla extract. Start to beat on medium-high speed until you achieve the combination needed.

 

Fifth, with the mixer on low speed, start to add about one-third of the flour mixture and start to mix until almost combined, then add half the buttermilk and mix until just combined. You can repeat by adding the third of the flour mixture and then ,add the last half of the buttermilk, and end by the last third of the flour. Beat until just well mixed.

Sixth, you can add the batter into the prepared loaf pan and put in the oven to bake for 45-55 minutes until the cake is golden brown and a fork comes out easy and clean with only a couple moist crumbs.


Seventh, Let the cake cool for about 15 minutes in the pan. Mix together the lemon juice and sugar for the lemon syrup. With precaution, invert the loaf pan, and transfer the cake to a cooling rack, then brush the syrup on the cake while it’s still warm. Leave the cake to cool.

Eighth, When the cake is cooled, start to mix all the icing ingredients, start with 1 tbsp lemon juice and milk and add the lemon juice as needed. The icing should be thick in texture. Pour icing over the cake and let dry.
